Looks like I got smoked salmon sandwiched between baguette bread.

Ah, that’s not smoked, actually. It’s cured salmon.1
It’s made by preserving the raw salmon to age for several days after adding salt, sugar, pepper and a herb called dill to it.
I heard that in the past, the cured salmon would be buried in the sand to ferment.
Jade
On my end, I received a butter sauteed mushroom sandwich.
The variety used seems to be chanterelle, correct?
As for the bread itself, it is a coarse rye brød2 with plenty of wholegrain kneaded into the dough.
I see sunflower seeds, pumpkin seeds, oats, flax, and sesame seeds among them…

Mine’s a…dry-cured ham and cheese sandwich… Efficient, since I can just eat it with one hand.

We make pancakes by baking them in an oven instead of using a frying pan around these parts.

- I’m not familiar with Scandinavian or Nordic cuisine, but this seems to be common there. I’m not sure if there’s an English name for it, but I see recipes that call these “Scandinavian/Nordic Oven Pancakes” or the like. A brief search of

(Finnish) andugnspannkaka
